Ingredients:


  • 500g spinach leaves, washed and chopped
  • 200g paneer, cut into cubes
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2-3 green chilies, chopped
  • 1 tsp ginger garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 tbsp oil
  • 1 tbsp butter
  • 2 tbsp cream (optional)


Instructions:


  1. Heat the oil in a pan over medium heat.
  2. Add the cumin seeds and let them splutter.
  3. Add the chopped onions and sauté until they turn golden brown.
  4. Add the ginger garlic paste and sauté for another minute.
  5. Add the chopped tomatoes and green chilies, and cook until the tomatoes turn soft and mushy.
  6. Add the coriander powder, turmeric powder, red chili powder, and salt, and mix well.
  7. Add the chopped spinach leaves and mix well.
  8. Cover the pan and let the spinach cook for about 10-15 minutes or until it turns soft.
  9. Let the spinach mixture cool and then blend it into a smooth paste using a blender or a hand blender.
  10. Heat the butter in a pan over medium heat.
  11. Add the paneer cubes and fry them until they turn golden brown.
  12. Add the spinach puree to the pan and mix well.
  13. Let the mixture simmer for 2-3 minutes.
  14. Add cream (optional) and mix well.
  15. Garnish with chopped cilantro and serve hot with rice or naan bread.

Note: 

You can adjust the spice level according to your taste preferences. If you like it spicier, you can add more green chilies or red chili powder. If you don't have paneer, you can substitute it with tofu or cottage cheese.
